Then stir in sparkling strawberry kiwi V8 and ginger beer for even more flavor and fizz, then finish with fresh lemon juice. Place the cucumber, strawberries and peppercorns into a cocktail shaker. Using a muddler or the back end of a wooden spoon, muddle the strawberries, cucumber and peppercorns (crush against the side of the shaker to release flavor).
Add the V8, ginger beer and lemon juice to the shaker and mix to combine.
Fill 2 glasses with ice. Strain the mixture into the glasses. Garnish with additional strawberries or cucumber slices, if desired.
