Step 1
Heat the oil in a 6-quart saucepot over medium-high heat. Add the onions and peppers and season with salt and pepper if desired. Cook vegetables 3 minutes or until the onions are softened, stirring occasionally.
Step 2
Season the ground beef with salt and pepper. Add the beef to the saucepot and cook until browned, stirring often to separate meat. Pour off any fat.
Step 3
Stir in picante sauce and broth and bring to a boil. Reduce heat and simmer 15 minutes. Stir in beans, corn and additional broth, if needed and simmer 1 minute or until heated through. Garnish, if desired, with your favorite chili toppings. We like shredded cheddar cheese, sour cream and cilantro.
