Tender chicken, green onion, salsa and Cheddar cheese are sandwiched in flour tortillas that are grilled until golden and delicious.

Top each of 4 tortillas with 1/2 cup cheese, 1/4 cup salsa, 1/4 cup chicken and 2 tablespoons green onions. Brush the edges of the tortillas with water. Top with the remaining tortillas and press the edges to seal.
Lightly oil the grill rack and heat the grill to medium. Brush the tops of the quesadillas with the oil. Place the quesadillas oil-side down on the grill rack. Brush the other side of the quesadillas with the oil. Grill for 5 minutes or until the cheese is melted, turning the quesadillas over once halfway through the grilling time. Remove the quesadillas from the grill and let stand for 2 minutes.
Cut each quesadilla into 4 wedges. Serve with the remaining salsa and the sour cream.
Prepare to make more than one serving; these are irresistible!
For this recipe, I decided to use leftover grilled chicken from our Memorial Day cook-out. That gave the quesadillas that extra "grilled taste". And I added a little extra (sharp cheddar) cheese. I love to bite into something cheesy, when the cheese stretches with every bite! ;) My George Forman really came in handy, since I hardly ever use it!

Very quick and delicious meal. Even my 6 year old liked it, without the salsa and green onions of course. I paired with Spanish rice and it was perfect. For added grilling taste I grilled the chicken I used in the quesadilla. I will definitely be making this dish again.

This is so easy to do, it takes very little time for me to make. I use some pre-cooked chicken from the freezer or I buy pre-cooked chicken. In just a little time you have a whole meal.
