We love overnight oats, and when you learn to make these overnight oats, you'll love them, too.  These easy overnight oats take only 5 minutes to assemble, and this Blueberry Lemon Overnight Oats recipe is a pretty and delicious version.  V8 Pomegranate Blueberry adds flavor and a pretty purple color while lemon zest brings a citrus pop.  Chia seeds bump up the fiber, making this a good-for-you breakfast that you can customize by topping with your favorite fresh fruit.  We like to add blueberries, but strawberries or sliced banana are great, too—or all three!  Blueberry Lemon Overnight Oats are a grab-and-go breakfast that you'll feel great about.

  • 1 1/3 cups uncooked old-fashioned oats
  • 1 cup V8® Pomegranate Blueberry 100% Fruit and Vegetable Juice
  • 1 container (5.3 ounces) vanilla plant based yogurt
  • 1/2 teaspoon grated lemon zest
  • 1 teaspoon chia seeds

Instructions

  • Step 1

    Combine the oats, V8, yogurt, lemon zest and chia seeds in a bowl.  Cover and refrigerate overnight or for up to 3 days.

    Stir before serving and top with fresh blueberries, if desired.
