Smashed (or muddled) fruit and herbs are key to making a Bourbon Smash. But, using pomegranate, blueberries and sprigs of thyme elevates this Pomegranate Blueberry Bourbon Smash recipe into the perfect holiday cocktail.  The sweet-tart flavors of pomegranate and blueberry balance the smoky rich taste of the bourbon, thyme brings an herbal note and ginger (both fresh and ginger beer) adds spicy bite.  This Pomegranate Blueberry Bourbon Smash is really delicious- and it only takes 5 minutes to make!

Ingredients

  • 2 tablespoons blueberries and/or pomegranate arils
  • 2 sprigs fresh thyme leaves
  • 1/2 teaspoon grated peeled ginger root
  • 1/2 cup V8® Blends 100% Juice Pomegranate Blueberry (4 fluid ounces) or Pomegranate Blueberry
  • 3 tablespoons bourbon (1 1/2 fluid ounces)
  • 1 tablespoon lemon juice (1/2 fluid ounce)
  • 6 tablespoons ginger beer (3 fluid ounces)

Instructions

  • Step 1

    Place the blueberries and/or pomegranate, thyme and ginger into a cocktail shaker.  Using a muddler or the back end of a wooden spoon, muddle the ingredients (lightly crush against the bottom of the shaker to release flavor).

  • Step 2

    Add the V8, bourbon, lemon juice and 3 ice cubes to the shaker.  Cover and shake until combined.

  • Step 3

    Fill 2 glasses with ice.  Strain the V8 mixture into the glasses.  Add the ginger beer and serve.
