Heat oil in a large skillet over medium high heat. Add chiles, mushrooms, ginger and garlic and sauté until softened.
Stir in chicken. Season with salt and pepper.
Add coconut water, soup, lemongrass, fish sauce, brown sugar and lime juice and simmer on low, 15 minutes, stirring occasionally. Remove and discard the lemongrass.
Spoon soup into bowls, top with basil and cilantro. Serve with rice.
