Step 1
Season the beef as desired. Cook the bacon in a 6-quart saucepot over medium-high heat for 2 minutes. Add the beef and cook until well browned, stirring occasionally.
Step 2
Add the mushrooms and cook for 3 minutes, stirring occasionally. Add the tomato paste and wine and cook and stir for 1 minute. Add the soup and carrots and heat to a boil. Reduce the heat to low. Cover and cook for 35 minutes or until the beef is fork-tender. Sprinkle with the parsley before serving.

Very flavorful and wonderful smelling. Using the right meat is important - do not use a tough cut or game meat. I added extra carrots and mushrooms to give the kids some more veggies for dinner. Also made a side of rice boiled in beef broth instead of water to compliment the dish and the beef flavor. Overall, it was very satisfying to all including the kids. Will make again!!!

This meal is so easy and flavorful. Easy to have ingredients on hand. I do not suggest using stew meat- stick with the recipe. Consistency is a little thin. At the very end, i mix a little cornstarch and water together and turn up the heat. Slowly add it while stirring to thicken it a bit. I serve over mashed potatoes with crusty bread. Delicious every time!

I made this last night for my family and it was incredible! I seasoned the beef with garlic salt and chopped garlic to give it a little more flavor. Instead of the tablespoon of tomato paste, I used the whole small can. I will be sure to make it with some chopped onions as well next time to give it more texture. Served great with white jasmine rice. This will definitely be made again!

I use stew meat (cook it an hour instead of 35 minutes) and only 4 strips of bacon to start (less fat). This dish is so flavorful and delicious! It's a huge hit whenever I serve it.
Simple and savory
Very easy to make and had a rich flavor, even better the next day. I substituted stew meat for the roast so cooking time increased by about 10 min to achieve tenderness. Served it with buttered wide egg noodles.
