Layer carrots and potatoes in slow cooker. Top with beef. Pour sauce over beef.
Cover and cook on LOW 7 to 8 hours or until beef is fork-tender. (Or cook on HIGH 4 to 5 hours).
Let stand 10 minutes or until sauce thickens. Stir before serving. Tip: Serve with your favorite crusty bread!

Red and/or green peppers
