Horseradish adds subtle bite to balance the rich cheesiness of this Cheddar Horseradish Mashed Potatoes recipe. Russet potatoes are the key to making these potatoes just right- they're starchy, so they mash up lighter and fluffier, cooked in broth for extra flavor. All you need to do is stir in the extras, condensed Cheddar cheese soup for creamy Cheddar flavor, sour cream for extra richness and horseradish for spicy heat. Top with chopped chives for more flavor and color. 6 ingredients and 30 minutes makes these Cheddar Horseradish Mashed Potatoes quick and easy- so try them with your holiday meal (they're especially great paired with roasted beef) or anytime you want comfort food that's a little extra!
Heat the potatoes and broth in a 4-quart saucepan over high heat to a boil. Cover and cook for 10 minutes or until the potatoes are tender. Drain the potatoes and reserve 1/2 cup broth.
Mash the potatoes with the soup, sour cream, horseradish and reserved broth. Season to taste with salt and pepper. Stir in the chives.
