Ingredients

  • 2 1/2 pounds russet potato, peeled and cut in 1-inch pieces (about 6 cups)
  • 2 cups Swanson® Natural Goodness® Chicken Broth
  • 1 can (10 1/2 ounces) Campbell’s® Condensed Cheddar Cheese Soup
  • 1/2 cup sour cream
  • 2 tablespoons horseradish
  • 2 tablespoons chopped fresh chives

Instructions

  • Step 1

    Heat the potatoes and broth in a 4-quart saucepan over high heat to a boil.  Cover and cook for 10 minutes or until the potatoes are tender.  Drain the potatoes and reserve 1/2 cup broth.

  • Step 2

    Mash the potatoes with the soup, sour cream, horseradish and reserved broth.  Season to taste with salt and pepper.  Stir in the chives.
