Ingredients

  • 4 strips bacon, chopped
  • 2 cups Swanson® Unsalted Chicken Broth
  • 1 can (10.5 ounces) Campbell’s® Condensed Cream of Mushroom Soup
  • 1 pound asparagus, trimmed and cut into 1 1/2-inch pieces (about 4 cups)
  • 16 ounces uncooked refrigerated cheese tortellini

  • Tips

    • How to choose asparagus: When choosing fresh asparagus, look for spears that are firm (should feel like they will snap if you bend them) and tips that are tightly closed and not mushy. Thick or thin spears are really a matter of preference, with thin tending to be more tender. Just make sure that you trim the bottoms if they are dried out or woody.
    • You can substitute 2 1/2 cups thawed frozen peas for the asparagus, if you like.  
    • For a creamier sauce, an additional 1/2 cup broth can be added while cooking the tortellini. 
  • Step 1

    Add the bacon to a 12-inch skillet over medium-high and cook, stirring occasionally for 5 minutes or until crisp. Remove the bacon from the skillet and drain on paper towels. Pour off bacon drippings. 

  • Step 2

    Add the broth and soup to the pan, stir to combine and heat to a boil.  Stir in the asparagus and cook for 3 minutes. 

  • Step 3

    Add in the tortellini and cook for an additional 3 to 5 minutes, stirring frequently, until the tortellini is tender, the asparagus is easily pierced with a knife, and the soup mixture is thickened. Stir in the bacon.  Season with cracked black pepper, if desired.  Serve in shallow bowls.
