This easy chicken and mashed potatoes recipe features tender chicken, broccoli and a cheesy sauce are served over creamy mashed potatoes in this tasty, one-dish dinner that's on the table in just 30 minutes.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 1/4 pounds skinless, boneless chicken breast halves
  • 1 can (10 1/2 ounces) Campbell’s® Condensed Broccoli Cheese Soup or 98% Fat Free Broccoli Cheese Soup
  • 1/3 cup milk
  • 2 cups fresh or frozen broccoliflorets
  • 4 cups hot mashed potatoes

Instructions

  • Step 1

    Heat the oil in a 10-inch skillet over medium-high heat.  Add the chicken and cook until well browned on both sides.

  • Step 2

    Stir the soup, milk and broccoli in the skillet and heat to a boil.  Reduce the heat to low.  Cover and cook for 5 minutes or until the chicken is cooked through.  Serve the chicken and sauce over the potatoes.

    This was so easy and so good! The only thing I did was double the sauce and add a little Cajun seasoning. I can't believe it was so easy and soooooo good! I cant wait to make it again!

    This recipe was delicious. I usually don't like chicken and potatoes together but I decided to try it and I am so glad I did. It was so good my 3 year old smiled after his first bite and told me how good it was. I am definitely making this again.
