Ingredients

  • 2 tablespoons butter
  • 1 cup thinly sliced white mushrooms (optional)
  • 6 egg, beaten
  • 1 can (10 1/2 ounces) Campbell’s® Condensed Cream of Mushroom Soup (you'll need 3 tablespoons for this recipe- reserve the rest for another use)
  • 1/2 cup shredded provolone or mozzarella cheese

Instructions

  • Step 1

    (If omitting mushrooms, skip this step.)  Heat a medium nonstick skillet over medium heat. Add 1 tablespoon butter and the mushrooms and season lightly with salt and pepper. Cook mushrooms, stirring until softened. Remove and set aside.

  • Step 2

    Turn heat to low, add 1 tablespoon butter to medium nonstick skillet.

  • Step 3

    Add eggs and swirl pan to cover the entire base. Add cooked mushrooms (if using), 3 tablespoons soup, cheese, salt and pepper to the center of the skillet. 

  • Step 4

    Once the eggs are set, gently fold the eggs over the filling to form the omelet. 

  • Step 5

    Slide omelet out of skillet onto plate and top with freshly chopped chives, if desired.
