(If omitting mushrooms, skip this step.) Heat a medium nonstick skillet over medium heat. Add 1 tablespoon butter and the mushrooms and season lightly with salt and pepper. Cook mushrooms, stirring until softened. Remove and set aside.
Turn heat to low, add 1 tablespoon butter to medium nonstick skillet.
Add eggs and swirl pan to cover the entire base. Add cooked mushrooms (if using), 3 tablespoons soup, cheese, salt and pepper to the center of the skillet.
Once the eggs are set, gently fold the eggs over the filling to form the omelet.
Slide omelet out of skillet onto plate and top with freshly chopped chives, if desired.
