This recipe for Instant Pot® Tasty Pulled Pork only takes 5 minutes to prep!  It's one of those set-it-and-forget-it dishes that makes home-cooking easy, even on your busy days.  Your Instant Pot® cooks the pork perfectly until fork-tender but not dry.  Condensed tomato soup is foolproof in the Instant Pot®- all you need is a few other pantry ingredients to make a sweet and tangy sauce for the pulled pork.  Serve Instant Pot®Tasty Pulled Pork with whatever you have on hand- on buns or biscuits, as a filling for tacos or quesadillas, even over rice!

Ingredients

  • 1 extra large onion, cut in half and sliced (about 1 1/2 cups)
  • 1 1/2 pounds boneless pork loin
  • 2 tablespoons packed light brown sugar
  • 2 teaspoons chili powder
  • 1 can (10 3/4 ounces) Campbell’s® Condensed Tomato Soup
  • 2 tablespoons cider vinegar
  • 6 Pepperidge Farm® Soft White Hamburger Buns

  • Tips

    • For smoky flavor, substitute 1 tablespoon applewood rub seasoning or 2 teaspoons smoked paprika for the chili powder.  Or omit the chili powder and stir in 1 tablespoon chopped chipotle chile in adobo with the soup.
    • Try serving the pork on the buns topped with coleslaw.  You can buy it prepared, or mix 1 1/2 cups coleslaw mix with 2 tablespoons mayonnaise and 1 teaspoon apple cider vinegar.
  • Step 1

    Place the onion into a 6-quart Instant Pot®.  Cut the pork in half lengthwise (for thinner pieces) and season with salt and pepper.  Sprinkle the pork with the brown sugar and chili powder.  Place the pork into the Instant Pot®.  Stir the soup and vinegar in a small bowl.  Pour the soup mixture over the pork.

  • Step 2

    Lock the lid and close the pressure release valve. Pressure cook on High pressure, setting the timer to 40 minutes (timer will begin counting down once pressure is reached- it takes about 15 minutes). When done, press Cancel and use the quick release method to release the pressure.

  • Step 3

    Remove the pork to a cutting board.  Select the Saute setting.  Cook the sauce mixture for 5 minutes or until reduced.  While the sauce is reducing, shred the pork.  Return the pork to the cooker and stir.  Season to taste.  Serve the pork mixture on the buns.
