It's not hard to break out of a dinner rut- just make this Creamy Cajun Chicken & Sausage Pasta.  The creamy Cajun cooking sauce is everything you need to make a delicious Cajun dish is in one little pouch, so all you have to add is a handful of ingredients.  Saute some chicken, andouille sausage and bell pepper, simmer with the sauce and toss with cooked pasta.  It's hearty, creamy, savory and a little spicy.  You can make it on the stovetop, in the oven, slow cooker or multi-cooker- the sauce works in them all!

Ingredients

  • 2 cups uncooked penne pasta (about 6 ounces)
  • 1 tablespoon vegetable oil
  • 1 1/4 pounds boneless, skinless chicken breast or thighs, cut into 1-inch pieces
  • 1/2 pound smoked andouille sausage, sliced
  • 1 small red bell pepper, cut in strips (about 1 cup)
  • 1 pouch (12 ounces) Campbell's® Creamy Cajun Cooking Sauce

  • Tips

    • To make in the oven, omit the oil.  While the penne is cooking, heat the oven to 425°F.  Spray a rimmed baking sheet with cooking spray.  Arrange the chicken, sausage and bell peppers on the baking sheet.  Pour the sauce over all.  Roast for 20 minutes or until the chicken is done, then toss with the cooked penne.
    • To make in a slow cooker, omit the oil and add 1 cup chicken broth.  Layer the peppers, sausage and chicken in a 6-quart  slow cooker.  Pour in the sauce and broth.  Cover and cook on HIGH 2 1/2 hours.  Stir in the uncooked penne.  Cover and cook on HIGH for 45 minutes or until chicken is done and penne is tender.
    • To make in a multi-cooker, omit the oil and add 1 cup water.  Layer the peppers, sausage, chicken and uncooked penne in 6-quart multi-cooker.  Pour in the sauce and water.  Do not stir.  Lock the lid and close the pressure release valve.  Pressure cook on HIGH pressure, setting the timer for 9 minutes.  When done, press Cancel and quick release the pressure.  Let stand 5 minutes.  Stir before serving.

    Cook and drain the penne according to the package directions.  While the penne is cooking, heat the oil in a 12-inch skillet over medium-high heat.  Add the chicken and cook until browned, stirring occasionally.

    Reduce the heat to medium.  Add the sausage and pepper and cook until the sausage is browned and the chicken is done.

  • Step 3

    Stir in the sauce and heat to a boil.  Add the cooked penne and toss to coat.
