  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1/2 yellow onion, diced
  • 1 pound ground beef
  • 1 tablespoon chopped pitted green olives
  • 1 tablespoon Jamaican curry powder
  • 1 can (10 1/2 ounces) Campbell’s® Condensed French Onion Soup
  • 2 cups shredded Gruyère cheese (about 8 ounces)
  • 10 discos empanada dough
  • 1 egg, beaten


  • Step 1

    Preheat oven to 350°F.  Heat a heavy saucepan over medium high heat. Add butter, garlic and onion. Sauté until softened, about 2 minutes. 

  • Step 2

    Add ground beef, olives and curry powder and cook until all beef is browned. 

  • Step 3

    Add soup and cook until reduced by half.

  • Step 4

    Stir in cheese.  Salt and pepper to taste. Remove the filling from the heat and let it cool to the touch. 

  • Step 5

    Lay out empanada dough and brush the edges with egg. Spoon about 3 tablespoons of filling into the center of each

  • Step 6

    Fold the dough over the filling to make a half-moon and press down edges to seal. 

  • Step 7

    Brush the tops of the empanadas with the egg and bake for 15 to 18 minutes or until golden brown.
