Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons Campbell's® FlavorUp! Rich Garlic & Herb Cooking Concentrate or Caramelized Onion and Burgundy Wine Cooking Concentrate
  • 2 teaspoons za'atar seasoning*
  • 1 1/4 pounds boneless, skinless chicken thigh
  • 3 large carrot, peeled and thinly sliced (about 3 cups)
  • 1 small yellow bell pepper, cut into 2-inch long strips (about 1 cup)
  • 1 large onion, cut in half and thinly sliced (about 1 cup)

  • Tips

    • *What is za'atar seasoning?  Za'atar is a Middle Eastern seasoning blend.  The ingredients can vary, but generally contain a blend of dried herbs with toasted sesame seeds and sometimes salt and citrus peel.  If you can't find it, you can substitute 1/2 teaspoon dried thyme leaves.
  • Step 1

    Heat the oven to 425°F.  Mix the oil, concentrate and za'atar seasoning in a large bowl.  Add the chicken and vegetables and toss to coat.  Arrange the chicken and vegetables on a rimmed baking sheet.  Season with black pepper (no need to add salt).

  • Step 2

    Roast for 15 minutes.  Stir and roast for another 5 minutes or until the chicken is done.
