Spray a 6-quart slow cooker with vegetable cooking spray. Layer one third of the potatoes and half of the onion in the cooker. Repeat the layers. Top with the remaining potatoes.
Stir the soup, milk, Parmesan cheese, salt and black pepper in a medium bowl. Pour the soup mixture over the potatoes. Cover and cook on HIGH for 4 to 5 hours or until the potatoes are tender.
Sprinkle with the Cheddar cheese. Cover and let stand for 5 minutes or until the cheese is melted.

This was so easy. Used baby red spuds and then topped with mozzarella cheese. I did use a liner in my slow cooker and sprayed to coat the liner. The neat thing that we did with this recipe, was after it was cooked it was put in a layered casserole (cornbread stuffing, pieces of turkey, the potatoes and then turkey gravy). Basically Easter dinner in a casserole dish (baked -- covered -- at 300 for an hour)

Great recipe, but did I miss somewhere how much Parmesan cheese to use?

Halfway thru cook-time and the crockpot is full of liquid? Maybe from the ham I added? I pulled some of it out and am hoping for the best....
No soup in ingredients?
Am I missing something? I don't see any cheddar cheese soup in the ingredient list. I assume just 1 can?
