Season the pork with salt and pepper. Heat the oil in a 10-inch skillet over medium-high heat. Add the pork and cook for 6 minutes or until browned on both sides (to prevent sticking- make sure the skillet and oil are hot before adding the pork).
Stir the soup and water in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the pork is done. Serve the mushroom gravy with the pork.
