Just when you thought it was impossible to improve on mashed potatoes, we bring you Everything Bagel-Seasoned Mashed Potatoes! Buttery Yukon Gold potatoes simmer in broth for extra flavor, then are mashed with condensed Cheddar cheese soup and cream cheese until smooth and rich. The potatoes are spooned into a baking dish and topped with a mixture of panko, butter and everything bagel seasoning, then baked until the topping is golden brown and crisp and the potatoes are creamy and piping hot. Heat the potatoes and broth in a 4-quart saucepan over high heat to a boil. Cover and cook for 10 minutes or until the potatoes are tender. Drain the potatoes and reserve 1/4 cup broth. While the potatoes are cooking, heat the oven to 375°F.
Mash the potatoes with the soup, cream cheese and reserved broth. Season with salt and pepper. Spoon the potato mixture into a lightly greased 2 1/2-to 3-quart shallow baking dish.
Stir the panko, butter and everything bagel seasoning in a small bowl. Sprinkle over the potato mixture.
Bake for 25 minutes or until hot and the panko mixture is golden brown.
