Step 1
Heat the oven to 450°F. While the oven is heating, spray a 3-quart casserole with vegetable cooking spray.
Step 2
Season the sweet potatoes as desired. Stir the soup, mustard, thyme, garlic powder and onion powder in a large bowl. Add the sweet potatoes and toss to coat. Pour the sweet potato mixture into the casserole. Cover the casserole.
Step 3
Bake for 20 minutes. Uncover. Sprinkle with the cheese.
Step 4
Bake, uncovered, for 25 minutes or until the sweet potatoes are tender. Serve warm.
Great kickoff to fall
I made this after I picked up too many sweet potatoes at the store and wanted to try something different than what I normally do. The only adjustment I made was to use more thyme and to use a mix of sharp cheddar and colby jack. Pretty easy and pairs well with a spicy white wine, like a gewurztraminer or a semi-dry riesling that has some acidity.
Easy and tasty
I used roughly 300 grams of sweet potato, 300 grams of broccoli and 300 grams of cauliflower, was tasty...I baked covered for 45 minutes and uncovered for 15, vegetables were cooked through after 45 minutes

Delicious! Put them in a 375 oven in order to bake them with the main course, so I had to leave them in longer. There was liquid in the dish after 30 minutes, but was cooked down after about another 25 minutes. I used the regular Cream of Mushroom soup, but would love to try the fancier soup in the recipe when I can find it.

I looked at the nutrition info for this recipe but did not see the serving size. What is the serving size on this?
Cooking times are not enough
I made this to the recipe using a stoneware container and it was not done after 45 minutes at 450 degrees. I would alter the cooking times to 45 to 50 minutes covered, then 10 to 15 minutes uncovered with the cheese.
