Looking for a tasty side to feed a hungry crowd? Sautéed broccoli, onion and garlic combine with Cheddar cheese soup, milk, brown rice and Parmesan cheese. Baked until hot and bubbling, this fabulous casserole is chock full of flavor and ready in just 1 hour!
 

Ingredients

  • 1 tablespoon soft, tub margarine
  • 1 large onion, chopped (about 1 cup)
  • 16 ounces frozen broccoli cuts
  • 1 clove garlic, chopped
  • 1/3 cup non fat milk
  • 1 can (10 1/2ounces) Campbell’s® Healthy Request® Condensed Cheddar Cheese Soup
  • 1 1/2 cups cooked brown rice
  • 3 tablespoons grated Parmesan cheese

Instructions

  • Step 1

    Heat the oven to 350°F.

  • Step 2

    Heat the margarine in a 10-inch skillet over medium heat. Add the onion and cook until tender-crisp, stirring occasionally.

  • Step 3

    Stir the broccoli and garlic in the skillet and cook until the broccoli is tender-crisp, stirring occasionally.  Stir in the milk, soup and rice.  Cook until hot, stirring occasionally.  Stir in the cheese and spoon the broccoli mixture into an 11x8x2-inch baking dish.

  • Step 4

    Bake for 20 minutes or until hot.

    I made this for my wife and daughter and they loved it as much as I did.

    I was not sure if this was going to be good, but I tried it, and it was great! It's very easy to modify and sub in veggies you have on hand.
