Looking for a healthy and tasty side to feed a hungry crowd? Sautéed broccoli, onion and garlic combine with Cheddar cheese soup, milk and brown rice to make a healthier but still delicious version of the beloved Broccoli Rice Casserole.
Heat the oven to 350°F.
Heat the olive oil in a 12-inch skillet over medium heat. Add the onion and cook until tender-crisp, stirring occasionally.
Stir the broccoli and garlic in the skillet and cook until the broccoli is tender-crisp, stirring occasionally. Stir in the milk, soup and rice. Cook until hot, stirring occasionally. Stir in the cheeses and season with salt and pepper. Spoon the broccoli mixture into an 11x8x2-inch (2-quart) baking dish.
Bake for 20 minutes or until hot.
