Cook and drain macaroni according to the package directions, adding the cauliflower during the last 5 minutes of the cooking time. Reserve 1/4 cup cooking water.
Heat a large saucepan over medium-low heat. Add cooked macaroni mixture, cheddar cheese soup, milk and cheeses and cook and stir until hot.
If needed, add reserved cooking water to thin out sauce. Spoon into bowls, top with chopped fresh parsley, if desired, and serve.
