This Creamy Chili Chicken Pasta recipe is all about the sauce.  It's three ingredients that you probably have in your pantry but may never have combined before- and they are fantastic together!  The cream of chicken with herbs soup balances out the spice of the chili powder so that the sauce is flavorful but not overwhelming.  Simmer with sauteed chicken while the pasta cooks and you'll have a family-friendly pasta dinner in 25 minutes!  Creamy Chili Chicken Pasta is creamy pasta with a Mexican flavor spin- try it for dinner tonight!

Ingredients

  • 8 ounces (about 2 cups) uncooked rotini (spiral) pasta
  • 1 1/4 pounds boneless, skinless chicken breast, cubed
  • 1 tablespoon vegetable oil
  • 1 can (10 1/2 ounces) Campbell’s® Condensed Cream of Chicken with Herbs Soup
  • 1/2 cup milk
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder

Instructions

  • Step 1

    Cook and drain the rotini according to the package directions.  While the rotini is cooking, season the chicken with salt and pepper.  Heat the oil in a 10-inch skillet over medium-high heat. Add the chicken and cook until browned.

  • Step 2

    Stir in the soup, milk, cheese, chili powder and garlic and cook for 5 minutes or until the chicken is done.  Add the chicken mixture to the rotini and toss to coat.  Season to taste.

    I doubled everything except the chicken & noodles. Mixed it all together at the end and let it simmer for a few minutes before dishing it up. Everyone loved it. When reheating leftovers, I add a little butter & cover the bowl. So yummy!!

    We added a little bit of red hot and onions...delicous! We also used whole wheat pasta because we didn't have any corkscew noodles at home and it tasted just as good! One last thing...we used the regular cream of chicken instead of the one with the Herbs. VERY GOOD MEAL and easy!
