We love a sheet pan dinner. But this Sheet Pan Salmon with Vegetables is so much better than most, thanks to a bit of mushroom and herb cooking concentrate. Can one ingredient make such a difference? Yes! Because you get the savory umami flavor of mushrooms without any of the work. It adds depth to the simple mixture of lemon and Dijon that coats the salmon and vegetables and takes this simple dish from good to amazing. It's ready to serve in less than 25 minutes, so try Sheet Pan Salmon with Vegetables tonight!
Step 1
Heat the oven to 425°F. While the oven is heating, spray a rimmed baking sheet with cooking spray. Stir the concentrate, lemon juice, oil and mustard in a small bowl.
Step 2
Arrange the salmon in the center of the baking sheet. Arrange the tomatoes and asparagus around the salmon. Spoon the concentrate mixture over the salmon and vegetables. Season with black pepper (no need to add salt).
Step 3
Roast for 12 minutes or until the salmon and vegetables are done.
