  • 1 tablespoon vegetable oil
  • 1 1/4 pounds boneless, skinless chicken breast (4 small or 2 large cut in half horizontally for thinner pieces)
  • 1 can (10.5 ounces) Campbell’s® Condensed Cream of Celery Soup
  • 1/2 cup milk
  • 1 tablespoon lemon juice
  • 1/2 pound asparagus, trimmed and cut into 1 1/2 inch pieces (about 2 cups)

    • How to choose asparagus: When choosing fresh asparagus, look for spears that are firm (should feel like they will snap if you bend them) and tips that are tightly closed and not mushy. Thick or thin spears are really a matter of preference, with thin tending to be more tender. Just make sure that you trim the bottoms if they are dried out or woody.
  • Step 1

    Season the chicken with salt and pepper.  Heat the oil in a 10-inch skillet over medium-high heat. Add the chicken and cook for 6 minutes or until browned on both sides (to prevent sticking, make sure the skillet and oil are hot before adding the chicken).

  • Step 2

    Add the soup, milk and lemon juice in the skillet, stir to combine and heat to a boil. Stir in the asparagus. Reduce the heat to low.  Cover and cook for 5 minutes or until the chicken is done, the asparagus is easily pierced with a knife, and the soup mixture has thickened.  Season to taste.  Serve topped with slices of fresh lemon, if desired.
