This Spicy Chorizo Queso Dip recipe is a stovetop version of queso fundido, a hearty dip make with cheese and chorizo, served with tortilla chips.  This version has 4 ingredients and is finished in 20 minutes, so you can really make it anytime!  Brown some fresh chorizo in a cast iron skillet, then add onion, jalapeño and Campbell's® Condensed Spicy Nacho Cheese Soup.  The soup brings the other ingredients together to make a creamy, spicy queso.  Cook until hot and bubbling, then serve right from the skillet with some tortilla chips for dipping.

Ingredients

  • 10 ounces uncooked fresh chorizo sausage, casings removed
  • 1 large onion, diced (about 1 cup)
  • 1/4 cup diced seeded jalapeño pepper or green bell pepper
  • 1 can (10 1/2 ounces) Campbell's® Condensed Spicy Nacho Cheese Soup

  • Tips

    • We used fresh chorizo links for this recipe.  Our links were about 3 1/4 ounces each, so we used 3 links for the 10 ounces needed, but size varies by brand.
  • Step 1

    Heat a 10-inch cast iron skillet over medium heat.  Cook the sausage, onion and jalapeño pepper for 10 minutes or until the sausage is well browned, stirring often to separate meat.  Pour off any fat.

  • Step 2

    Increase the heat to medium-high.  Stir in the soup and heat to a boil.  Reduce the heat to medium.  Cook for 2 minutes.  Stir before serving.  Serve the dip warm in the skillet, with tortilla chips for dipping, if desired.
